WAVES ITALIAN BAR & RESTAURANT

With a glass of Pinot Grigio in your hand, Spaghetti Vongole on your plate and the glorious vista of an island set in an azure sea, you could be forgiven for thinking you're on the Amalfi Coast. Yet visiting such a restaurant with tempting menus and stunning sea views doesn't require a plane flight.

Waves Italian Bar and Restaurant has created a fine reputation with the proven qualities of exceptional dishes, real value for money and attentive and knowledgeable service. Set within the popular Celtic Haven luxury cottage resort at Lydstep, just outside Tenby and overlooking Caldey Island, Waves offers 'al fresco dining' on their fabulous terrace or in the comfort of their contemporary dining room.

The strong Italian influence was the idea of Celtic Haven owner Philip Evans and is put into practice by Restaurant Manager/Chef David Zanato. Giving the menus at Waves restaurant gourmet quality with an Italian theme was just the kind of opportunity David was seeking when he joined the Celtic Haven team in April 2009. Pembrokeshire born but with Italian parents, David started his training in the county and then enjoyed a lengthy and successful career as a chef in some of Britain's most famous establishments such as Claridge's, the Cavalry and Guards Club, Sheraton Park Tower Casino, Les Ambassadors and the Royal Thames Yacht Club.

Waves has been getting rave reviews from resort guests, local residents and holiday-makers since David has been at the helm. David and his friendly, service oriented staff, ensure their selection of original and creative meat, seafood, vegetarian and pasta dishes give Waves' clients a truly relaxing and appetising culinary experience. What David enjoys about Waves is the range of good food they are able to offer, making considerable use of fresh, local products.

Listed as one of the Best in Wales and described as "simply stunning" by Wales in Style, the restaurant offers some enticing Italian dishes. For example, a tempting starter is Mussels Rimini, fresh mussels drenched in Italian white wine and a generous helping of fresh cream. If seafood as a main dish takes your fancy, try Spaghetti Vongole, an Italian coastal village specialty - fresh clams in their shells combined with garlic and wine sauce and spaghetti. Delicious! For a change from seafood, what about Lamb Chianti, a rump steak of lamb marinated in rich red wine and rosemary on a bed of braised cabbage?

Restaurant Manager David Zanato is able to recommend appropriate wines from an excellent Italian-biased selection. Apart from a range of dessert wines and post meal spirits, customers might be inclined to try an Italian liqueur called Pisa which comes, not surprisingly, in a leaning bottle. Underpinning the Manager's policy is the emphasis on affordability. "It's vital that we offer convenience and variety as well as top quality food and service at a price that suits most pockets", says David. "For example, we offer light lunches, an excellent children's menu and dishes for people with special diets. Our pizzas are also very popular, following traditional southern Italy recipes and they are available to take away for customers' convenience." The restaurant is also aware resort guests may catch their own fish and these can be prepared and cooked to order.

That island may not be Capri, but dining at Waves Italian bar & restaurant transports you to Italy with its tempting menus and fabulous Caldey Island view - and no flight or jacket required!
